  • 2 Tbsp sugar
  • 2 Tbsp unsweetened cocoa powder
  • 1/4 tsp salt
  • 2 1/2 Tbsp shortening
  • 2 Tbsp cold butter
  • Ice water
  • 1/4 cup fruit juice (as bourbon substitute)
  • 1/4 cup cornstarch
  • 3 eggs
  • 1/2 cup light corn syrup
  • 3/4 cup sugar
  • 1/2 cup unsalted butter (melted and slightly cooled)
  • Approximately 10 oz pecan halves
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, blend flour, sugar, cocoa powder, and salt. Add shortening and cold butter; pulse until crumbly. Gradually add ice water until dough forms. Chill for 30 minutes.
  3. In a mixing bowl, whisk fruit juice and cornstarch until smooth, then mix in eggs, corn syrup, and sugar. Stir in melted butter and chopped pecans.
  4. Roll out the dough and fit it into a pie pan. Layer chocolate chips at the bottom and pour the filling over them. Top with remaining pecan halves.
  5. Bake for about one hour until bubbling; cool before serving.
