  • 1 large yellow onion (thinly sliced)
  • 2 teaspoons olive oil
  • 12 pounds shaved beef steak
  • 1/2 cup gluten-free Worcestershire sauce
  • 1 tsp Seasoning Salt (to taste)
  • 68 slices provolone cheese (or alternative cheese)
  • 6 French rolls (hoagie or Italian)
  • 1 medium bell pepper (optional)
  • 1 package mushrooms (sliced, optional)
  • 12 tablespoons hot sauce (optional)

Instructions

  1. Heat a large pan over medium heat. Melt butter in the pan and add sliced onions. Stir occasionally until onions are soft and caramel-colored, about 6-10 minutes. Remove from pan and set aside.
  2. If not pre-sliced, cut the beef as thinly as possible. Season with seasoning salt lightly over all pieces.
  3. In the same skillet, increase heat to medium-high. Add remaining butter and olive oil. Add beef in one layer; if crowded, cook in batches. Cook for 1-2 minutes per side until browned but slightly undercooked.
  4. Pour Worcestershire sauce over beef along with hot sauce if desired. Stir for one minute before returning onions to pan; mix well with juices from beef.
  5. Place cheese slices over beef mixture. Cover pan for about one minute until cheese is melted and gooey.
  6. Heat a griddle or large skillet over medium-high heat. Spread butter on cut sides of rolls; toast until golden brown.
  7. Serve cheesesteak on toasted rolls immediately.
