  • ½ jalapeño (seeds and ribs removed, roughly chopped)
  • 10 ounce can diced tomatoes with green chilies (drained)
  • 14.5 ounce can fire roasted diced tomatoes (undrained)
  • ½ cup fresh cilantro leaves
  • juice from ½ of a lime
  • ¼ teaspoon ground cumin
  • ¼ teaspoon salt
  • pinch of sugar (optional)

Instructions

  1. Prep your vegetables by adding onion, garlic, and jalapeño to a food processor. Pulse until they reach a rough consistency.
  2. Drain the liquid from the canned diced tomatoes with green chilies and add them along with the fire-roasted tomatoes to the processor.
  3. Add cilantro leaves and lime juice, followed by ground cumin, salt, and optional sugar.
  4. Blend until reaching your desired consistency—smooth or chunky.
