  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 5 oz baby spinach
  • 2 cups mandarin orange segments
  • 1/3 cup sliced red onions
  • 1/3 cup toasted pine nuts
  • 4 oz crumbled feta cheese (or plant-based alternative)
  • ⅓ cup extra virgin olive oil
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons freshly squeezed lemon juice

Instructions

  1. Pre-cook the beets by roasting or boiling until tender; cool and slice.
