Description

  • 1 teaspoon olive oil
  • ½ cup sliced red onions
  • 2 cups cooked chicken breast (shredded)
  • ½ cup BBQ sauce
  • 2 large tortillas (1012 inch)
  • 2 tablespoons butter (room temperature)
  • 2 cups shredded cheddar-jack cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced onions and sauté until soft, about 5 minutes. Stir in the shredded chicken and BBQ sauce; mix well and remove from heat.
  2. Spread butter on one side of each tortilla.
  3. In a medium skillet over medium heat, place one tortilla butter-side down. Sprinkle ¼ cup cheese on half of the tortilla, add half of the chicken mixture on top, followed by another ¼ cup cheese.
  4. Fold the tortilla in half and cook until golden brown on one side. Flip gently using a spatula and cook until both sides are golden brown. Transfer to a wire rack while repeating with remaining tortillas.
