Ingredients

  • 1 lb sirloin steak
  • 2 tablespoons balsamic vinegar (for marinade)
  • 1 cup cherry tomatoes, halved
  • 4 ounces Gorgonzola cheese, crumbled
  • 6 cups mixed spring greens
  • 1 corn on the cob, grilled
  • 3 tablespoons balsamic vinegar (for vinaigrette)
  • Fresh herbs (basil and parsley)
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon ground black pepper
  • 1/2 red onion, thinly sliced
  • 1 tablespoon lemon zest

Instructions

  1. Marinate the steak by mixing balsamic vinegar, olive oil, mustard, garlic powder, salt, and pepper in a bowl. Place the steak in a ziplock bag with marinade for 30 minutes.
  2. Prepare the gremolata by combining minced basil, parsley, lemon zest, and garlic in a small bowl.
  3. Grill the corn until marked, then slice off kernels.
  4. Grill the marinated steak for 4-5 minutes per side. Let rest before slicing.
  5. Whisk together vinaigrette ingredients and toss half with greens, tomatoes, Gorgonzola cheese, corn, and onion.
  6. Assemble by laying sliced steak on top of the salad and drizzling with remaining gremolata.
