  • 4 tbsp olive oil
  • 1 large sweet onion, diced
  • 1 tsp dried mustard
  • 1/2 tsp ground ginger
  • 1/4 cup tomato paste
  • 1 cup apple cider
  • 1/2 cup water
  • 1/4 cup maple syrup
  • 1/4 cup molasses
  • 4 (15 oz) cans pinto beans, drained and rinsed
  • 1 1/2 tsp salt
  • 1 large rosemary stalk
  • 1 tbsp apple cider vinegar

Instructions

  1. Preheat the oven to 325°F.
  2. In an oven-safe skillet, heat olive oil over medium heat. Add diced onion and sauté until softened (5–7 minutes). Stir in dried mustard, ground ginger, and tomato paste; cook for another 2–3 minutes.
  3. Add apple cider, water, maple syrup, molasses, pinto beans, and a rosemary stalk to the skillet. Stir well and bring to a boil.
  4. Cover the skillet with a lid and transfer it to the preheated oven. Bake for 45 minutes.
  5. Remove the lid and bake uncovered for an additional 15 minutes until thickened. Stir in apple cider vinegar and let sit for 5–10 minutes before serving.
