- 2 cups granulated sugar
- ½ cup Dutch-processed cocoa powder
- 1½ tsp baking powder
- 1½ tsp baking soda
- ½ tsp salt
- ½ cup whole milk
- 2 large eggs
- ½ cup sour cream
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 tsp espresso powder
- 1 cup hot water
- 4 large egg yolks
- 2 tbsp granulated sugar
- 2 tbsp cornstarch
- 2 cups heavy cream (divided)
- 3.5 oz dark chocolate, chopped
- 4.5 oz white chocolate, chopped
- 5 oz milk chocolate, chopped
- ⅓ cup heavy cream
Instructions
- Preheat your oven to 350°F (180°C). In a mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, whisk eggs, milk, sour cream, oil, and vanilla until smooth. Gradually stir in hot water.
- Combine the wet and dry mixtures until fully incorporated and divide the batter between two greased and lined 8-inch round cake pans.
- Bake for about 35 minutes or until a toothpick comes out clean. Allow cakes to cool completely.
- For the mousse: Warm half of the heavy cream in a saucepan. Whisk egg yolks with sugar and cornstarch in another bowl; temper with hot cream before cooking to thicken.
- Divide the custard into two bowls; add dark chocolate to one and white chocolate to the other until fully melted. Whip remaining cream to stiff peaks and fold into each mousse mixture.
- Assemble: Place one cake layer in a springform pan; spread dark mousse over it followed by white mousse. Add the second cake layer on top and chill for at least four hours.
- For the ganache: Heat remaining cream until steaming; pour over chopped milk chocolate and stir until smooth.
- Once chilled, remove from pan and pour ganache over the top.
