- 600 grams of cod fillets
- Salt and black pepper, to taste
- 2 tablespoons of olive oil
- 1 medium onion, thinly sliced
- 1 tablespoon grated fresh ginger
- 2 crushed garlic cloves
- 300 milliliters of coconut milk
- Zest and juice of 1 large organic lemon
Instructions
- Preheat your oven to 200°C (400°F).
- Season the cod fillets with salt and black pepper, then place them in a baking dish.
- In a pan over medium heat, add olive oil and sauté the sliced onion until translucent.
- Stir in the ginger and garlic; cook until fragrant.
