Ingredients

  • 600 grams of cod fillets
  • Salt and black pepper, to taste
  • 2 tablespoons of olive oil
  • 1 medium onion, thinly sliced
  • 1 tablespoon grated fresh ginger
  • 2 crushed garlic cloves
  • 300 milliliters of coconut milk
  • Zest and juice of 1 large organic lemon

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Season the cod fillets with salt and black pepper, then place them in a baking dish.
  3. In a pan over medium heat, add olive oil and sauté the sliced onion until translucent.
  4. Stir in the ginger and garlic; cook until fragrant.
  5. Pour in the coconut milk, add lemon juice and zest, then simmer for about 5 minutes.
  6. Pour the sauce over the seasoned cod fillets.
  7. Bake for about 20 minutes or until the fish flakes easily with a fork.
