- 1/4 cup chickpea flour
- 2 tablespoons olive oil (for frying)
- 1/3 cup tahini (for dressing)
- 2 tablespoons lemon juice (freshly squeezed)
- 1 tablespoon apple cider vinegar
- 1 teaspoon maple syrup or honey
- 1 clove of garlic, finely grated
- 2–4 tablespoons of water (to thin)
- Pinch of salt and cayenne pepper (optional for heat)

Instructions
- Cook diced sweet potatoes and rinsed red lentils in boiling water for 15–18 minutes until tender. Drain and cool.
- Mash the sweet potatoes and lentils together in a mixing bowl until slightly textured.
- Stir in chopped onion, garlic, spices, parsley, and chickpea flour until combined.
- Shape into 8–10 patties; chill in the refrigerator for 15–20 minutes.
- Prepare tahini dressing by whisking tahini, lemon juice, apple cider vinegar, maple syrup, garlic, salt, and water to desired consistency.
- Heat olive oil in a skillet over medium heat and cook patties for 3–4 minutes per side until golden brown.
