  • 5 pounds sweet potatoes (peeled and cut into 1” pieces)
  • 4 tablespoons unsalted butter
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1.5 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup heavy cream
  • 2 cups mini vegan marshmallows
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons unsalted butter (room temperature)
  • 1/4 cup dark brown sugar (packed)

Instructions

  1. Boil sweet potatoes in salted water until tender (15-20 minutes). Drain well.
  2. Mash drained sweet potatoes with butter, brown sugar, salt, vanilla extract, cinnamon, nutmeg, and heavy cream until smooth.
  3. Gently fold in the vegan marshmallows.
  4. Transfer mixture to a greased baking dish.
  5. In another bowl, mix flour, salt, cinnamon, room temperature butter, and dark brown sugar until crumbly for the streusel.
  6. Sprinkle the streusel over the sweet potato mixture.
  7. Preheat oven to 350°F (175°C) and bake for approximately 30 minutes or until heated through and golden brown.
