- 2 pounds sweet potatoes, peeled
- 1/3 cup unsalted butter, melted
- 1/2 cup brown sugar
- 2 large eggs, beaten
- 1/2 cup half-and-half
- 1 teaspoon vanilla extract

- 1/3 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1 and 2/3 cups pecans
Instructions
- Cook sweet potatoes in a pot of boiling water until tender, about 20 minutes. Drain and cool.
- Preheat oven to 350°F (177°C) and grease a baking pan.
- Mash cooled sweet potatoes in a mixing bowl. Stir in melted butter, brown sugar, eggs, half-and-half, vanilla extract, and salt until smooth. Pour into the baking pan.
