- 2 lbs boneless skinless chicken breasts or thighs
- 1 cup pineapple juice
- ½ cup soy sauce
- ½ cup brown sugar
- 3 cloves garlic (minced)
- ½ teaspoon ground ginger
- 1 can (8 oz) pineapple chunks (drained)
- 1 red bell pepper (thinly sliced)
Instructions
- Season the chicken with salt and pepper and place it in the slow cooker.
- In a mixing bowl, combine pineapple juice, soy sauce, brown sugar, minced garlic, and ground ginger. Whisk until blended.
- Pour the marinade over the seasoned chicken.
- Add drained pineapple chunks and sliced red bell pepper on top of the chicken.
- Cover and cook on low for 5–6 hours or high for 3–4 hours until chicken is tender.
- To thicken the sauce, remove chicken and mix cornstarch with water; stir into sauce and cook on high for an additional 15 minutes.
- Return chicken to the slow cooker to coat with thickened sauce and heat through for another 5 minutes before serving.
