Description

Sweet Hawaiian Crock Pot Chicken is a delightful dish that transports you to the tropics with its sweet and savory pineapple glaze. This easy slow cooker recipe features tender chicken simmered in a delicious marinade, making it perfect for family dinners or casual gatherings.


Ingredients

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 cup pineapple juice
  • ½ cup soy sauce
  • ½ cup brown sugar
  • 3 cloves garlic (minced)
  • ½ teaspoon ground ginger
  • 1 can (8 oz) pineapple chunks (drained)
  • 1 red bell pepper (thinly sliced)

Instructions

  1. Season the chicken with salt and pepper and place it in the slow cooker.
  2. In a mixing bowl, combine pineapple juice, soy sauce, brown sugar, minced garlic, and ground ginger. Whisk until blended.
  3. Pour the marinade over the seasoned chicken.
  4. Add drained pineapple chunks and sliced red bell pepper on top of the chicken.
  5. Cover and cook on low for 5–6 hours or high for 3–4 hours until chicken is tender.
  6. To thicken the sauce, remove chicken and mix cornstarch with water; stir into sauce and cook on high for an additional 15 minutes.
  7. Return chicken to the slow cooker to coat with thickened sauce and heat through for another 5 minutes before serving.
