  • 3 large russet potatoes
  • 1/4 cup minced shallots
  • 2 1/2 cups grated sharp white Cheddar cheese
  • 1 3/4 cups sour cream
  • 1 teaspoon butter, or as needed
  • 3 teaspoons kosher salt
  • 0.5 teaspoon freshly ground white pepper
  • 1 pinch cayenne pepper, or to taste

Instructions

  1. Preheat oven to 400°F (200°C). Poke holes in each potato, wrap in aluminum foil, and bake for about 1 hour and 15 minutes until tender.
  2. Let the potatoes cool at room temperature, then refrigerate until chilled (8 hours or overnight).
  3. Preheat the oven again to 425°F (220°C) and butter a casserole dish.
  4. Shred the cooled potatoes with skin on into a bowl; add shallots and seasonings.
  5. Stir in Cheddar cheese, then fold in sour cream gently.
  6. Transfer to the casserole dish and bake for 30-35 minutes until hot and golden brown.
