  • 1 cup salted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups mini vegan marshmallows (divided)
  • 2 cups graham crackers (broken into small pieces)
  • 1/2 cup milk chocolate chips
  • 1/2 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 375°F and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until creamy.
  3. Add eggs and vanilla extract; mix until well combined.
  4. In another bowl, whisk together flour, cornstarch, baking soda, and salt. Gradually add dry mixture to the wet ingredients until just combined.
  5. Fold in graham cracker pieces, mini marshmallows, and chocolate chips.
  6. Scoop dough onto prepared baking sheets with enough space in between.
  7. Bake for about 10 minutes until edges are set but centers remain soft.
  8. Remove from oven; press additional marshmallows and graham cracker pieces on top before returning to oven for another 1-2 minutes.
  9. Cool on baking sheets for a few minutes before transferring to a wire rack.
