  • 1/2 cup pumpkin puree
  • 3 tablespoons packed brown sugar
  • 1/2 teaspoon vanilla paste or extract
  • 1/4 teaspoon pumpkin spice mix
  • 1 teaspoon pure maple syrup
  • 2 round pre-made pie crusts
  • 1/2 cup confectionery sugar
  • 2 teaspoons pure maple syrup (for glaze)
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cut each pie crust into four rectangles.
  3. In a bowl, mix pumpkin puree, brown sugar, vanilla, pumpkin spice, and maple syrup until smooth.
  4. Place four pie crust rectangles on the prepared baking sheet and spoon filling onto each. Leave a half-inch border.
  5. Cover with remaining rectangles and crimp edges with a fork to seal.
  6. Bake for 15-20 minutes or until golden brown.
  7. While baking, whisk together confectionery sugar, maple syrup, and milk until smooth for the glaze.
  8. Once cooled, drizzle glaze over pop tarts and allow to set before serving.
