Description

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon paprika (plus extra for dusting)
  • Optional: orange food coloring
  • 2 tablespoons fresh chives, finely chopped

Instructions

  1. Cook the eggs by placing them in a single layer in a saucepan, covering with cold water, and bringing to a boil. Remove from heat, cover, and let sit for 10 minutes.
  2. Prepare an ice bath while the eggs sit. After 10 minutes, transfer the eggs to the ice bath to cool completely.
  3. Peel the cooled eggs under running water and slice them in half lengthwise.
  4. Scoop out the yolks into a bowl and mix with mayonnaise, mustard, salt, pepper, paprika, and optional food coloring until smooth.
  5. Pipe the yolk mixture into the egg whites using a piping bag fitted with a star tip for decoration.
  6. Use a knife or toothpick to create pumpkin ridges and insert chopped chives as stems.
