- 2 cups confectioner’s sugar
- 1 cup whipped topping (Cool Whip)
- 15 ounces pumpkin puree
- 2 teaspoons pumpkin spice
- 4 ounces instant vanilla pudding
- 1/2 cup Cool Whip
- 1 1/4 cup half and half
- 8 ounces Cool Whip
- Pecans (chopped)
Instructions
- Preheat your oven to 350°F. Spray a 9×13 inch baking pan with cooking spray.
- In a food processor, pulse graham crackers into fine crumbs. Combine with sugar and melted butter in a mixing bowl. Press into the bottom of the baking pan and bake for 5–7 minutes. Allow to cool.
- For the cheesecake layer, mix softened cream cheese and confectioner’s sugar until smooth in a stand mixer. Gently fold in whipped topping and spread over the cooled crust.
- In another bowl, whisk together half-and-half and vanilla pudding until thickened. Add pumpkin puree and pumpkin spice; mix well before folding in additional whipped topping.
