Description

  • 12 large eggs
  • ½ cup mayonnaise
  • 2 tsp Dijon mustard
  • 1 tsp white vinegar
  • Orange gel or liquid food coloring
  • Fresh chives (for garnish)
  • Smoked paprika (optional)

Instructions

  1. Boil the eggs: Place eggs in a saucepan, cover with water, and bring to a boil. Once boiling, cover and remove from heat; let sit for 10–12 minutes. Cool in ice water before peeling.
  2. Prepare the filling: Halve each egg and scoop out yolks into a mixing bowl. Mash yolks with mayonnaise, Dijon mustard, vinegar, salt, and pepper until smooth.
  3. Color the filling: Add orange food coloring to the yolk mixture and mix until evenly tinted.
  4. Pipe into egg whites: Fill each egg half with the colored yolk mixture using a piping bag for decorative ridges.
  5. Garnish: Top each filled egg with a piece of chive as a stem and optional smoked paprika.
