  • 1 cup all-purpose flour
  • ½ cup softened butter
  • ¾ cup chopped pecans
  • 8 ounces softened cream cheese
  • 1 cup powdered sugar
  • 2½ cups milk
  • 3 (3.4-ounce) packages white chocolate or vanilla instant pudding mix
  • 1 (15-ounce) can pumpkin puree
  • 1 teaspoon pumpkin spice
  • 3 cups whipped topping (divided)

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine flour, butter, and pecans until crumbly. Press into the bottom of a 9×13-inch baking dish and bake for 15 minutes until golden brown. Let cool.
  2. Beat softened cream cheese and powdered sugar in another bowl until smooth. Fold in 1 cup of whipped topping and spread over the cooled crust.
  3. Mix pumpkin puree, pudding mix, milk, and pumpkin spice in a separate bowl until thickened. Spread over the cream cheese layer.
  4. Top with remaining whipped topping and refrigerate for at least three hours before serving.
