- ¼ cup low-sodium soy sauce
- 2 tablespoons olive oil
- 2 tablespoons brown sugar
- 1.5 lbs boneless, skinless chicken (thighs or breasts), cubed
- 1.5 cups fresh pineapple chunks
- 1 red bell pepper, cut into pieces
- 1 red onion, cut into wedges
Instructions
- In a mixing bowl, whisk together pineapple juice, soy sauce, olive oil, brown sugar, and minced garlic until well combined.
- Place cubed chicken in a zip-top bag or shallow dish, pour in the marinade, and refrigerate for at least 30 minutes (preferably 2–4 hours).
- If using wooden skewers, soak them in water for about 30 minutes. Thread marinated chicken, pineapple chunks, red bell pepper pieces, and red onion wedges onto skewers.
- Preheat your grill to around 350°F and grill skewers for approximately 12–15 minutes or until the internal temperature of the chicken reaches 165°F.
