  • 2 pounds sweet potatoes (about 3 medium)
  • 2 tablespoons extra virgin olive oil
  • ¾ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon chili powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon chipotle chili powder
  • Optional: 1 tablespoon honey or pure maple syrup

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper.
  2. Scrub the sweet potatoes thoroughly. If desired, peel them; otherwise, pat dry after scrubbing.
  3. Trim the ends and cut each potato into 1-inch-thick rounds, then cube them into approximately equal pieces.
  4. In a mixing bowl, toss the cubed sweet potatoes with olive oil, honey (if using), salt, and spices until well-coated.
  5. Spread the seasoned sweet potatoes evenly on the prepared baking sheet without overcrowding.
  6. Roast for about 30–40 minutes, flipping halfway through until they are fork-tender and caramelized at the edges.
  7. Once done, serve warm and adjust seasoning if necessary.
