Ingredients

  • 4 skinless boneless chicken thighs
  • 200g fresh pineapple chunks
  • 1 small shallot
  • Juice of 1 lime (plus extra for serving)
  • Small handful of fresh coriander, chopped
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • 1 1/2 tsp tomato puree
  • 1 tsp salt
  • 2 large garlic cloves
  • 1 ripe avocado, cubed
  • 8 small corn or flour tortillas

Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. In a medium bowl, whisk together chipotle paste, honey, tomato puree, salt, and crushed garlic.
  3. Cut chicken into bite-sized pieces and coat in the marinade. Let sit while the oven preheats.
  4. Spread marinated chicken on a baking tray and add pineapple chunks on top.
  5. Roast in the oven for about 30 minutes until chicken is fully cooked.
  6. While roasting, chop the shallot and cube the avocado.
  7. Remove from oven and squeeze lime juice over the dish. Toss with shallots and coriander before serving in tortillas with avocado.
