- 4 skinless boneless chicken thighs
- 200g fresh pineapple chunks
- 1 small shallot
- Juice of 1 lime (plus extra for serving)
- Small handful of fresh coriander, chopped
- 2 tbsp chipotle paste
- 2 tbsp runny honey
- 1 1/2 tsp tomato puree
- 1 tsp salt
- 2 large garlic cloves
- 1 ripe avocado, cubed
- 8 small corn or flour tortillas
Instructions
- Preheat the oven to 200 degrees Celsius.
- In a medium bowl, whisk together chipotle paste, honey, tomato puree, salt, and crushed garlic.
- Cut chicken into bite-sized pieces and coat in the marinade. Let sit while the oven preheats.
- Spread marinated chicken on a baking tray and add pineapple chunks on top.
- Roast in the oven for about 30 minutes until chicken is fully cooked.
- While roasting, chop the shallot and cube the avocado.
- Remove from oven and squeeze lime juice over the dish. Toss with shallots and coriander before serving in tortillas with avocado.
