  • ⅔ cup freeze-dried strawberries (before pulverizing)
  • 1 cup unsalted butter (at room temperature)
  • 1 ¼ cup granulated sugar
  • 1 large egg (at room temperature)
  • 1 large egg yolk (at room temperature)
  • 2 tsp vanilla extract
  • 1 tsp lemon zest (divided)
  • 2 ½ tbsp Dutch-process cocoa powder
  • ¼ tsp instant espresso (optional)
  • White, pink, and brown sprinkles or jimmies (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, mix together flour, cornstarch, baking soda, and salt; set aside.
  3. In a food processor, pulverize freeze-dried strawberries into a fine powder.
  4. In a stand mixer, cream together butter and sugar until fluffy. Add the egg and vanilla; mix well.
  5. Gradually incorporate the flour mixture until just combined. Divide the dough into three portions: one for vanilla (add lemon zest), one for strawberry (add strawberry powder), and one for chocolate (add cocoa).
  6. Form small balls from each dough type and gently combine them to create marbled cookies.
  7. Place cookie balls on baking sheets and bake for 11–12 minutes until set but not browned. Cool before serving.
