  • 5 to 6 Tablespoons ice water
  • 4 medium apples, peeled and diced small (about 3 cups)
  • 1/4 cup white sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 2 Tablespoons all-purpose flour
  • 1 large egg, whisked with 1 Tablespoon water
  • Sanding sugar (optional)

Instructions

  1. Prepare the dough by mixing flour, rosemary (if using), sugar, and salt. Cut in cold butter until crumbly. Add ice water gradually until it forms a dough. Chill for 30 minutes.
  2. In a separate bowl, combine diced apples with sugars, cinnamon, and flour.
  3. Preheat the oven to 375°F (190°C).
  4. Roll out the chilled dough and cut circles to fit muffin tin cups; fill with the apple mixture.
  5. Top with additional dough if desired and seal edges.
  6. Brush tops with egg wash and bake for 18 minutes or until golden brown.
