Ingredients

  • 3 ½ cups all-purpose flour
  • 2 ¼ tsp instant yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 cup warm water (110°F)
  • 2 tbsp butter, melted
  • 8 mozzarella cheese sticks
  • ¼ cup grated parmesan cheese
  • 2 tbsp fresh rosemary, finely chopped
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 8 cups water
  • ⅓ cup baking soda
  • 1 egg yolk
  • 1 tbsp water

Instructions

  1. In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until foamy.
  2. Add melted butter, salt, and flour; mix until a dough forms. Knead on a floured surface for about 5 minutes until smooth.
  3. Place the dough in a greased bowl and cover it with a towel. Let it rise in a warm spot for about 1 hour or until doubled in size.
  4. Punch down the dough and divide into 8 equal portions. Roll each portion into a strip and place mozzarella in the center. Fold and seal tightly.
  5. Shape each rope into a pretzel by twisting ends over each other.
  6. Prepare baking soda bath by boiling water and adding baking soda. Dip each pretzel for 15-20 seconds before placing on parchment-lined baking sheet.
  7. Brush with egg wash and sprinkle with parmesan, rosemary, garlic powder, and black pepper.
  8. Preheat oven to 425°F (220°C) and bake for 12-15 minutes or until golden brown.
