- 3 ½ cups all-purpose flour
- 2 ¼ tsp instant yeast
- 1 tbsp sugar
- 1 tsp salt
- 1 cup warm water (110°F)
- 2 tbsp butter, melted
- 8 mozzarella cheese sticks
- ¼ cup grated parmesan cheese
- 2 tbsp fresh rosemary, finely chopped
- 1 tsp garlic powder
- ½ tsp black pepper
- 8 cups water
- ⅓ cup baking soda
- 1 egg yolk
- 1 tbsp water
Instructions
- In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until foamy.
- Add melted butter, salt, and flour; mix until a dough forms. Knead on a floured surface for about 5 minutes until smooth.
- Place the dough in a greased bowl and cover it with a towel. Let it rise in a warm spot for about 1 hour or until doubled in size.
- Punch down the dough and divide into 8 equal portions. Roll each portion into a strip and place mozzarella in the center. Fold and seal tightly.
- Shape each rope into a pretzel by twisting ends over each other.
- Prepare baking soda bath by boiling water and adding baking soda. Dip each pretzel for 15-20 seconds before placing on parchment-lined baking sheet.
- Brush with egg wash and sprinkle with parmesan, rosemary, garlic powder, and black pepper.
- Preheat oven to 425°F (220°C) and bake for 12-15 minutes or until golden brown.
