  • ½ cup confectioners’ sugar
  • ⅛ tsp Diamond Crystal kosher salt
  • ½ large egg yolk (at room temperature)
  • 2 Tbsp almond flour
  • ½ heaping cup cake flour
  • 5 tsp matcha (green tea powder)
  • ½ cup cake flour (for the green dough; please weigh your flour)
  • Egg white (from separating the egg yolk)

Instructions

  1. Prepare all ingredients, ensuring the butter is at room temperature.
  2. For the base dough, blend softened butter, confectioners' sugar, and salt until creamy. Mix in egg yolk and almond flour; gradually add cake flour.
  3. For the green dough, follow similar steps but incorporate matcha powder with cake flour for a smooth consistency.
  4. Chill both doughs wrapped in plastic for at least 2 hours.
  5. Roll out each dough to ¼ inch thickness and cut into squares or rectangles to create the checkerboard pattern.
  6. Assemble layers of dough pieces and bake on a parchment-lined baking sheet at 350°F (175°C) for about 15 minutes until lightly golden.
