- 1 (1.5 lb) bag Baby Boomer Little Potatoes
- 2 lbs boneless, skinless chicken breasts
- 1/2 cup prepared ranch dressing
- 2 cups Mexican Cheese Blend
- 1 cup cooked and crumbled turkey bacon
- 1/2 cup diced green onions
Instructions
- Preheat oven to 450°F. Cut potatoes into 1-inch cubes and mix with 1/4 cup ranch dressing, salt, and pepper in a bowl. Place in a greased baking dish.
- Bake potatoes for 30 minutes, stirring every 10 minutes.
- While baking, cube chicken breasts and combine with remaining ranch dressing, salt, and pepper.
- Once potatoes are half-cooked, layer chicken mixture on top. Cover with foil and reduce temperature to 400°F; bake for an additional 20 minutes or until chicken reaches an internal temperature of 165°F.
