  • 1 (1.5 lb) bag Baby Boomer Little Potatoes
  • 2 lbs boneless, skinless chicken breasts
  • 1/2 cup prepared ranch dressing
  • 2 cups Mexican Cheese Blend
  • 1 cup cooked and crumbled turkey bacon
  • 1/2 cup diced green onions

Instructions

  1. Preheat oven to 450°F. Cut potatoes into 1-inch cubes and mix with 1/4 cup ranch dressing, salt, and pepper in a bowl. Place in a greased baking dish.
  2. Bake potatoes for 30 minutes, stirring every 10 minutes.
  3. While baking, cube chicken breasts and combine with remaining ranch dressing, salt, and pepper.
  4. Once potatoes are half-cooked, layer chicken mixture on top. Cover with foil and reduce temperature to 400°F; bake for an additional 20 minutes or until chicken reaches an internal temperature of 165°F.
  5. Remove foil and sprinkle with cheese, turkey bacon, and green onions. Bake for another 8-10 minutes until cheese melts.
