  • 1 tablespoon hot sauce
  • 1½ teaspoon kosher salt
  • 1½ teaspoon paprika
  • 1 teaspoon garlic powder
  • 1½ cups all-purpose flour
  • ¾ cup cornstarch
  • 2 teaspoons kosher salt
  • 2 teaspoons paprika
  • 8 oz unsalted butter
  • 1 tablespoon lemon pepper seasoning
  • Juice of ½ lemon
  • Zest of ½ lemon
  • 68 cups neutral frying oil (like canola, vegetable, or peanut)

Instructions

  1. In a large bowl, marinate chicken wings with yellow mustard, hot sauce, kosher salt, paprika, and garlic powder for about 10 minutes.
  2. Combine flour, cornstarch, kosher salt, and paprika in another bowl.
  3. Coat each marinated wing in the flour mixture; place on a parchment-lined baking sheet.
  4. Heat oil in a skillet or fryer to 350-360°F.
  5. Fry wings for 8-10 minutes until golden brown and crispy.
  6. In a separate pan, melt butter and mix in lemon pepper seasoning, juice, and zest.
  7. Toss fried wings in the lemon pepper sauce before serving.
