  • 4 cups cubed rotisserie chicken
  • 3/4 cup no added sugar marinara sauce
  • 1 tbsp Italian seasoning
  • 2 garlic cloves (minced)
  • 1 tbsp olive oil
  • 2 tbsp almond flour
  • 3/4 cup grated parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 3/4 cup finely crushed parmesan crisps

Instructions

  1. Preheat the oven to 350°F.
  2. In a non-stick skillet, heat olive oil and sauté minced garlic until fragrant.
  3. Add Italian seasoning, marinara sauce, almond flour, and cubed chicken; mix well and cook for an additional 5 minutes.
  4. Pour the mixture into a greased 9” x 13” casserole dish.
  5. Layer grated parmesan, shredded mozzarella, and crushed crisps on top.
  6. Bake for 25-30 minutes until cheese is melted and bubbly.
  7. Allow cooling slightly before serving.
