- 1 pound boneless skinless chicken breast (cut into 1-inch pieces)
- 1 red bell pepper (diced)
- 15 oz pineapple chunks (juice and fruit separated)
- 1/3 cup chicken broth
- 1/4 cup soy sauce
- 2 tablespoons light brown sugar
- 1 clove garlic (minced)
- 1 teaspoon ginger (grated)
- 1 tablespoon cornstarch
Instructions
- In a mixing bowl, combine pineapple juice, chicken broth, soy sauce, brown sugar, minced garlic, grated ginger, and red pepper flakes (if desired). Mix well and set aside.
- Heat olive oil in a large skillet over medium heat. Add seasoned chicken pieces and sear for about 8 minutes until nearly cooked through.
- Stir in diced red bell pepper and cook for an additional 2-3 minutes until softened.
- Add pineapple chunks and pour the prepared sauce mixture over the ingredients. Let simmer for about 5 minutes.
- To thicken the sauce, mix cornstarch with water to create a slurry. Gradually add this to the pan while stirring until desired consistency is reached.
