  • 2 teaspoons olive oil
  • 1 pound boneless skinless chicken breast (cut into 1-inch pieces)
  • 1 red bell pepper (diced)
  • 15 oz pineapple chunks (juice and fruit separated)
  • 1/3 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tablespoons light brown sugar
  • 1 clove garlic (minced)
  • 1 teaspoon ginger (grated)
  • 1 tablespoon cornstarch

Instructions

  1. In a mixing bowl, combine pineapple juice, chicken broth, soy sauce, brown sugar, minced garlic, grated ginger, and red pepper flakes (if desired). Mix well and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add seasoned chicken pieces and sear for about 8 minutes until nearly cooked through.
  3. Stir in diced red bell pepper and cook for an additional 2-3 minutes until softened.
  4. Add pineapple chunks and pour the prepared sauce mixture over the ingredients. Let simmer for about 5 minutes.
  5. To thicken the sauce, mix cornstarch with water to create a slurry. Gradually add this to the pan while stirring until desired consistency is reached.
