- 2 pounds boneless skinless chicken thighs
- 1/2 cup canned pineapple juice
- 1/3 cup olive oil
- 1/4 cup reduced sodium soy sauce
- 1/4 cup ketchup
- 1/4 cup Asian sweet chili sauce
- 1 tbsp Asian chili sauce
- 1 tsp ground ginger
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- In a mixing bowl or large freezer bag, whisk together the marinade ingredients until well combined.
- Reserve 1/4 cup of the marinade for basting later. Add chicken thighs to the remaining marinade; seal and coat evenly. Marinate for 4 to 24 hours.
- Preheat grill to medium-high heat (375-400°F). Clean and grease grill grates.
- Grill the marinated chicken for 6-8 minutes on each side or until fully cooked (internal temperature reaches 165-175°F). Baste with reserved marinade during the last few minutes.
- Serve hot alongside grilled pineapple or cilantro lime rice.
