  • 1 3/4 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon fine sea salt
  • 3/4 cup sour cream or plain full-fat yogurt (at room temperature)
  • 1/2 cup vegetable oil
  • 3 large eggs (at room temperature)
  • 1 teaspoon vanilla extract
  • 1 cup beef broth
  • 4 sticks unsalted butter (at cool room temperature)
  • 6 cups powdered sugar (sifted)
  • 4 ounces semisweet or bittersweet chocolate (finely chopped)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
  3. In another bowl, mix together sour cream, vegetable oil, eggs, vanilla extract, and beef broth until smooth.
  4. Gradually add the wet mixture to the bowl of dry ingredients, mixing on low speed until just combined; do not overmix.
  5. Pour equal portions of batter into the prepared pans and bake for 30–40 minutes or until a toothpick inserted in the center comes out clean.
  6. Once baked, let the cakes cool in their pans for about 10 minutes before transferring to a cooling rack to cool completely.
  7. For the frosting, beat softened butter until creamy, then gradually add sifted powdered sugar while mixing on low speed. Add the melted chocolate and beat until fluffy.
  8. Once the cakes are completely cooled, frost the top of one layer, place the second layer on top, and frost the top and sides of the entire cake as desired.
