- 2 tbsp butter
- 2 tbsp cream
- 4 tbsp canola oil
- 1 large green pepper (seeded & diced)
- 1 small yellow onion (peeled & diced)
- 1 pkg refrigerated diced hash brown potatoes
- 1 cup chopped chicken
- 1 1/2 cup shredded cheddar cheese
Instructions
- In a large skillet over medium heat, melt butter. Whisk eggs with cream, pour into the skillet, reduce heat to low, and scramble until just underdone. Set aside.
- In the same skillet, add canola oil and heat. Add hash browns, cooking for about 10 minutes total, flipping halfway until golden.
- Mix in green pepper, onion, and chicken; cook for an additional 5-10 minutes.
- Serve immediately or let cool before storing in airtight containers.
