  • 2 Honeycrisp apples, sliced
  • 3 tablespoons salted butter
  • 3 tablespoons maple syrup
  • 1 sheet frozen puff pastry, thawed
  • 1 wheel of brie (812 ounces)
  • 2 tablespoons apple butter or fig preserves
  • 1 beaten egg (for brushing)
  • Coarse sugar (for sprinkling)
  • Fresh thyme (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss apple slices with salted butter and maple syrup in a baking dish. Roast for about 25 minutes until soft and caramelized.
  3. On a lined baking sheet, lay out thawed puff pastry flat. Place the brie wheel in the center and cut away a small section of the rind on top.
  4. Spread apple butter or fig preserves on top of the brie.
  5. Wrap the puff pastry over the brie, sealing edges well and brushing with beaten egg. Sprinkle coarse sugar on top.
  6. Bake for 20-25 minutes until golden brown and crisp.
  7. Top with roasted apples from step two and garnish with fresh thyme before serving warm.
