  • ¾ cup dark brown sugar
  • 2 tbsp unsalted butter (melted)
  • 2 tbsp molasses
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp cinnamon
  • ¼ tsp ground allspice
  • 32 oz cream cheese (softened)
  • 3 eggs (room temperature)
  • ½ cup heavy whipping cream
  • ¼ cup molasses
  • ¼ cup sour cream
  • 2 tbsp cornstarch
  • 2 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 2 tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp ground allspice
  • 8 oz cream cheese (softened)
  • 1 cup heavy whipping cream
  • 3 tbsp maple syrup
  • ½ tsp maple extract (optional)
  • ¾ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs, dark brown sugar, melted butter, molasses, and spices in a bowl. Press into a springform pan.
  3. In another bowl, mix softened cream cheese and dark brown sugar until smooth. Add eggs one at a time, then mix in remaining filling ingredients until combined.
  4. Pour filling over crust and bake for about 85 minutes until set but slightly jiggly in the center. Cool gradually in the oven with the door ajar.
  5. Refrigerate for at least 5 hours or overnight before serving.
