- 225 g dark chocolate, chopped
- 56 g butter
- 2 eggs, room temperature
- 100 g caster sugar
- 90 g raw sugar
- 1 teaspoon vanilla extract
- 85 g chocolate chips
Instructions
- Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating. Line a baking tray with parchment paper.
- Melt dark chocolate and butter in a heatproof bowl over simmering water, stirring until combined. Add vanilla extract.
- In another bowl, whisk together the caster sugar, raw sugar, and eggs until light and fluffy (about 5 minutes).
- Sift together flour, cocoa powder, baking powder, and salt in another bowl. Mix in chocolate chips.
- Fold the melted chocolate mixture into the egg-sugar mixture gently.
- Carefully fold in the dry ingredients until just combined.
- Scoop tablespoon-sized portions onto the prepared tray, leaving space between each. Bake for 12-14 minutes until set on top.
