  • 2 cups apple cider
  • 3 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 8 ounces unsalted butter
  • 2 1/4 cups sugar
  • 3 large eggs
  • 1 cup whole milk
  • 2 tsp vanilla
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground clove
  • 1/4 tsp ground nutmeg
  • 1 1/2 tsp allspice
  • 2 Honey Crisp apples, peeled, cored, and pureed
  • 1 8-ounce package of cream cheese
  • 1 stick of butter for icing
  • 5 cups powdered sugar
  • 1/4 cup plus 3 tsp fruit juice
  • 1/2 tsp vanilla for icing

Instructions

  1. Preheat oven to 350°F (175°C) and grease three 9-inch round cake pans.
  2. Reduce apple cider in a saucepan until about 1 cup remains. Let it cool slightly.
  3. In one bowl, mix flour, baking powder, salt, and spices. In another bowl, cream butter and sugar until fluffy.
  4. Add eggs one at a time followed by cooled cider, milk, and vanilla; mix well.
  5. Gradually combine dry ingredients with wet ingredients and fold in pureed apples.
  6. Divide the batter among pans and bake for about 25 minutes. Cool before frosting.
  7. For icing: Beat cream cheese and butter; add powdered sugar gradually along with fruit juice until smooth.
  8. Layer cakes with icing between each layer and frost the top and sides.
