- 2 Honey Crisp apples, peeled, cored, and pureed
- 1 8-ounce package of cream cheese
- 1 stick of butter for icing
- 5 cups powdered sugar
- 1/4 cup plus 3 tsp fruit juice
- 1/2 tsp vanilla for icing
Instructions
- Preheat oven to 350°F (175°C) and grease three 9-inch round cake pans.
- Reduce apple cider in a saucepan until about 1 cup remains. Let it cool slightly.
- In one bowl, mix flour, baking powder, salt, and spices. In another bowl, cream butter and sugar until fluffy.
- Add eggs one at a time followed by cooled cider, milk, and vanilla; mix well.
- Gradually combine dry ingredients with wet ingredients and fold in pureed apples.
- Divide the batter among pans and bake for about 25 minutes. Cool before frosting.
- For icing: Beat cream cheese and butter; add powdered sugar gradually along with fruit juice until smooth.
- Layer cakes with icing between each layer and frost the top and sides.
