  • 3 pounds Russet potatoes (peeled & diced)
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup sour cream
  • 1/4 cup butter (melted)
  • 1/3 cup scallions (chopped)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • Pepper (to taste)
  • 2 cups grated sharp cheddar (divided)
  • 1 cup freshly grated parmesan (divided)

Instructions

  1. Boil the diced Russet potatoes in a large pot until just tender; drain thoroughly.
  2. Preheat the oven to 350°F (175°C).
  3. In a mixing bowl, combine cream of chicken soup, sour cream, melted butter, scallions, garlic powder, onion powder, salt, pepper, and half of both cheeses. Stir until smooth.
  4. Pour the creamy mixture over the drained potatoes and toss gently to coat evenly.
  5. Add the remaining cheeses on top and bake uncovered for about 45 minutes until golden brown and bubbly.
  6. Let sit for 5-10 minutes before serving.
