- 2 tbsp granulated sugar (for swirl)
- 1 tsp cornstarch
- 1 tbsp water
Instructions
- In a small saucepan, combine blueberries, sugar, cornstarch, and water. Cook over medium heat for about 5 minutes until thickened. Mash slightly with a fork and let cool.
- In another bowl, mix cream cheese with sugar and vanilla extract until smooth.
- Cream together softened butter, granulated sugar, and brown sugar until fluffy. Add egg and vanilla; mix well.
- Whisk together flour, baking soda, and salt; gradually add to the butter mixture until combined.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop dough onto the baking sheet and create wells in the center of each ball.
- Fill wells with cream cheese mixture and top with blueberry swirl; gently swirl together.
- Bake for 12–15 minutes or until edges are set.
