- 3 & 1/2 pounds boneless beef shoulder
- 3/4 cup extra-virgin olive oil
- 3/4 cup fresh orange juice
- 1/2 cup fresh lime juice
- 1 cup cilantro (finely chopped)
- 8 garlic cloves (minced)
- 2 teaspoons ground cumin
- Kosher salt and pepper
Instructions
- Prepare the marinade by mixing orange juice, cilantro, mint leaves, and garlic in a ziplock bag. Add olive oil, orange zest, lime juice, oregano, and cumin; seal and shake.
- Marinate the beef shoulder in the mixture for at least several hours or overnight for maximum flavor.
- Preheat oven to 425°F (220°C). Place a wire rack over a rimmed baking sheet.
- Remove beef from marinade (discard marinade) and season with salt and pepper. Roast for 30 minutes until lightly browned.
- Lower oven temperature to 375°F (190°C) and continue roasting until internal temperature reaches 160°F (71°C), about 1 hour and 20–30 minutes.
- Allow the beef to rest covered with aluminum foil for at least 20 minutes before carving.
