- 1.5 pounds boneless, skinless chicken breasts or thighs
- 1 packet taco seasoning
- 1 can Rotel (drained)
- Juice of 1 lime
- Flour or corn tortillas
- Pico De Gallo
- Guacamole
- Sour Cream
- Lime wedges
- Cilantro
- Cheese
Instructions
- Spray the crockpot with non-stick cooking spray.
- Place chicken in the bottom of the crockpot. Sprinkle with taco seasoning, then add Rotel and lime juice.
- Cover and cook on high for 3-4 hours or low for 7-8 hours until chicken is easily shredded.
- Drain excess liquid, leaving about half a cup in the pot. Shred chicken using two forks.
- Warm tortillas and fill them with shredded chicken and desired toppings.
