  • 2 pounds boneless, skinless chicken breasts
  • ½ cup low sodium soy sauce
  • 1 cup water
  • 3 tablespoons light brown sugar
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 2 teaspoons ground ginger
  • 3 teaspoons minced garlic
  • ¼ cup honey
  • 2 cups broccoli florets
  • 1 medium red bell pepper (sliced)
  • ¼ cup cornstarch

Instructions

  1. Lightly spray the slow cooker with nonstick cooking spray and add the chicken.
  2. In a medium bowl, whisk together soy sauce, water, brown sugar, rice vinegar, sesame oil, ground ginger, minced garlic, and honey. Pour the sauce over the chicken.
  3. Cover and cook on high for 2½ to 3½ hours or low for 4 to 5 hours.
  4. Remove chicken from the slow cooker with some teriyaki sauce and shred using two forks.
  5. Whisk cornstarch into reserved sauce until smooth; then return shredded chicken, bell peppers, and broccoli to the slow cooker. Stir to combine.
  6. Cook for an additional 30–45 minutes until sauce thickens and vegetables are tender.
  7. Serve over rice garnished with green onions and sesame seeds.
