- 2 lbs boneless, skinless chicken thighs
- 1 cup pineapple juice
- 1½ tbsp apple cider vinegar
- 2 tsp sesame oil
- ⅓ cup soy sauce
- ½ cup brown sugar
- ⅓ cup ketchup
- 2 tsp fresh ginger (grated)
- 1½ tsp garlic (minced)
- 2 tbsp cornstarch
- ¼ cup water
Instructions
- Place chicken thighs in a 6-quart crock pot.
- In a mixing bowl, whisk together pineapple juice, apple cider vinegar, sesame oil, soy sauce, brown sugar, ketchup, ginger, and garlic until combined. Pour over chicken.
- Cover and cook on high for 3-4 hours or low for 6-7 hours until tender.
- Remove chicken; mix cornstarch with water until smooth and add back to the pot. Stir well.
