- 4 pounds yellow potatoes
- 2 tablespoons kosher salt
- 1/2 teaspoon baking soda
- 1/4 cup olive oil (or beef tallow/ghee/avocado oil)
- 1 whole head garlic
- 1 tablespoon finely chopped fresh rosemary
- 1/4 teaspoon freshly-cracked black pepper
- Flaky sea salt for finishing
Instructions
- Preheat the oven to 450°F (232°C) with a large roasting pan inside.
- Boil the rinsed potatoes in salted water with baking soda until fork-tender (about 25 minutes). Drain and dry.
- Carefully add hot oil to the roasting pan, then toss dried potatoes in it along with salt and pepper. Add the garlic head cut-side down.
- Roast for 55–60 minutes, tossing every 20 minutes until golden brown and crispy.
- Mash roasted garlic with rosemary and olive oil, then mix back into the potatoes for added flavor before serving.
