- 2 tablespoons extra virgin olive oil
- 4–6 garlic cloves, minced
- 1 (14 oz.) can full-fat coconut cream/milk
- 1/2 cup vegetable or seafood stock
- Juice of 1 lemon
- 1 cup organic kale, chopped
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried parsley
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- 1 tsp dill
- 2 Tbsps cornstarch + 2 Tbsps water
- 2 cups cooked Basmati rice
- 1/2 lemon, sliced thin (seeds removed)
Instructions
- In a non-stick skillet over medium heat, warm the olive oil and sauté minced garlic until fragrant.
- Add coconut cream and vegetable stock; stir to combine.
