  • 2 tablespoons extra virgin olive oil
  • 46 garlic cloves, minced
  • 1 (14 oz.) can full-fat coconut cream/milk
  • 1/2 cup vegetable or seafood stock
  • Juice of 1 lemon
  • 1 cup organic kale, chopped
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 tsp dill
  • 2 Tbsps cornstarch + 2 Tbsps water
  • 2 cups cooked Basmati rice
  • 1/2 lemon, sliced thin (seeds removed)

Instructions

  1. In a non-stick skillet over medium heat, warm the olive oil and sauté minced garlic until fragrant.
  2. Add coconut cream and vegetable stock; stir to combine.
  3. Incorporate seasonings and lemon juice into the mixture.
  4. Mix cornstarch with water until smooth; add to the skillet while stirring until thickened.
  5. Place the tilapia in the skillet, cover, and cook on medium-low for about 10 minutes until fully cooked.
  6. Add chopped kale in the last few minutes of cooking to wilt before serving.
