  • 2 lb chicken (breasts, thighs, legs)
  • 1/4 cup fresh cilantro (chopped)
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 2 teaspoons minced garlic
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. In a medium bowl, combine chopped cilantro, olive oil, lime juice, lime zest, minced garlic, chili powder, cumin, salt, and black pepper. Whisk until mixed well.
  2. Place chicken in a resealable bag or shallow dish and pour marinade over it. Seal or cover tightly and refrigerate for at least 30 minutes (up to 12 hours).
  3. Preheat grill or grill pan over medium heat. Lightly oil grates.
  4. Grill boneless chicken for about 4-6 minutes per side; bone-in cuts for approximately 8-10 minutes per side until internal temperature reaches 165°F.
