- 2 lb chicken (breasts, thighs, legs)
- 1/4 cup fresh cilantro (chopped)
- 1/4 cup Extra Virgin Olive Oil
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 2 teaspoons minced garlic
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
- In a medium bowl, combine chopped cilantro, olive oil, lime juice, lime zest, minced garlic, chili powder, cumin, salt, and black pepper. Whisk until mixed well.
- Place chicken in a resealable bag or shallow dish and pour marinade over it. Seal or cover tightly and refrigerate for at least 30 minutes (up to 12 hours).
- Preheat grill or grill pan over medium heat. Lightly oil grates.
- Grill boneless chicken for about 4-6 minutes per side; bone-in cuts for approximately 8-10 minutes per side until internal temperature reaches 165°F.
