  • 1 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups sharp cheddar cheese (grated)
  • 1/2 cup Parmesan cheese (grated)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • Salt and black pepper to taste
  • Dried thyme
  • Nutmeg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash, peel, and slice potatoes thinly (about 1/8 inch). Soak slices in cold water to prevent browning.
  3. In a large saucepan, melt butter over medium heat. Sauté onion until soft, then add garlic.
  4. Stir in flour and cook until bubbly. Gradually whisk in milk and cream until thickened.

  7. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
