  • 1 sheet shortcrust pastry (or 8 mini tart shells)
  • 2 large onions, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp sugar
  • 5 oz goat cheese, softened
  • 2 large eggs
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • Fresh thyme, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the tart shells by cutting shortcrust pastry into rounds, pressing them into greased mini tart pans, pricking the bottoms with a fork, and blind baking for 10 minutes.
  3. In a large skillet, heat olive oil and butter over medium-low heat. Add sliced onions and sugar, cooking slowly until caramelized (20–25 minutes).
  4. Whisk together eggs, heavy cream, salt, and pepper until smooth.
  5. Assemble each tartlet by placing caramelized onions in the shell, crumbling goat cheese on top, and pouring in the egg mixture.
  6. Bake for 20–25 minutes or until set and golden.
  7. Garnish with fresh thyme before serving warm.
