Description

Indulge in these delicious Caramel Apple Dessert Cups! Perfectly layered with flavors, they’re an easy no-bake treat that everyone will love!


Ingredients

  • 4 cups apples (peeled and chopped)
  • ½ cup light brown sugar
  • 1 tsp cinnamon
  • 2 cups vanilla wafer crumbs
  • ¼ cup salted or unsalted butter (melted)
  • 1 pkg instant vanilla pudding mix (3.4 ounces)
  • 1 cup milk
  • ⅓ cup salted caramel sauce
  • 1 ½ cups heavy cream
  • Additional caramel sauce for garnish

Instructions

  1. Prepare the Cinnamon Apples: In a medium saucepan, combine peeled and chopped apples with light brown sugar and cinnamon. Cook over medium heat, stirring occasionally until the apples are soft and the liquid thickens. Once done, set aside to cool.
  2. Make the Vanilla Wafer Crust: In a mixing bowl, combine vanilla wafer crumbs with melted butter. Stir until fully incorporated. Portion this mixture into 28 – 2 ounce plastic cups using a small cookie scoop. Press down firmly with the back of another plastic cup to create an even crust.
  3. Whip Up the Caramel Mousse: In a large mixing bowl, combine instant vanilla pudding mix and milk. Whisk until smooth and let it chill for about 5 minutes. After chilling, add salted caramel sauce to this mixture. Use an electric hand mixer on medium speed to mix until smooth.
  4. Finish the Mousse: Pour in heavy cream into the pudding mixture. Whip with an electric hand mixer for about 3-5 minutes until it becomes thick and creamy.
  5. Assemble the Dessert Cups: Transfer the caramel mousse mixture into a large piping bag. Pipe this delicious mousse into each plastic cup on top of your vanilla wafer crusts.
  6. Add Cinnamon Apples & Drizzle Sauce: Using a spoon, portion out your cooled cinnamon apples over each caramel mousse layer. Drizzle additional caramel sauce on top if desired.
  7. Chill & Serve: Seal each cup with a lid or cover them lightly with plastic wrap. Chill in the refrigerator before serving; they can be enjoyed immediately or stored for up to 2-3 days.
